Teff Cookies (gluten-free!) VEGAN

This recipe gives the main ingredients and method to make plain Teff cookies, but we've included cacao powder as an optional ingredient if you want to make chocolate teff cookies. 

Teff is a type of gluten-free grain that is commonly used for baking purposes. I prefer using teff flour when baking cookies because it gives them a hard, nice texture and structure and improves the crumb structure, which is a very important thing in gluten-free baking.

What you'll need to prepare Teff cookies:
  • 75g of butter (substitute with coconut oil for a vegan version if necessary).
  • 75g of sugar (substitute with coconut sugar for a healthier version of stevia or xylithol at your own desired quantity).
  • 4 tbsp of portable water
  • 100g of Teff flour (gluten-free) Usually found in Organic stores.
  • 1 tsp of baking powder (or bicarbonate of soda mixed with vinegar or lemon juice).
  • 1 tbsp, and a bit more, of dairy-free milk, such as almond or rice (click here to review our recipe for delicious almond milk).
  • 1 tbsp organic vanilla extract.
  • 1-2 tbsp of raw cacao powder for a chocolatey version. 
  • 75 g of organic chocolate chips if desired for a choc chip cookie.
Method:
  1. Preheat the oven to 200 degrees Centigrade (which is equivalent to about 392 degrees Fahrenheit).
  2. Mix the butter or coconut oil and sugar together until creamy.
  3. Beat in our few tablespoons of water and add the delicious vanilla extract.
  4. Add or sieve in the Teff flour and baking powder. (If you don't have baking powder, then take a 1/4 spoon of bicarbonate of soda and mix it will lemon juice or vinegar. It will sizzle and bubble. Then stir in this mixture into the dough.) Mix dough thoroughly.
  5. Stir in our vegan milk and chocolate chips if desired. You can also add some cocoa powder for a chocolate cookie version.
  6. Taste a bit of the dough to make sure that it possesses the correct amount of sweeteness. You won't be able to stop yourself anyway! :)
  7. Grab a tablespoon or ice cream scoop and take a serving of dough. Roll it into a ball and place on a baking sheet lined with non-stick parchment paper. Do the same for the rest of the dough until you have balls of dough on the sheet.
  8. Now, we need to make the shape of the cookies flatter. So take some milk, dip a fork into it and then press it against the upper surface of each dough ball to make it flat and cookie-like. 
  9. Once your cookies are ready to bake, pop them into the preheated oven and bake for about 20-25 minutes. 
  10. Take out and enjoy with tea or as a healthy, guilt-free snack!
